Paneer raviolis in spinach sauce

Palak Paneer
A dish close to my heart...
Even our marriage was fixed, I gotta know my hubby likes palak paneer very much..
My lil Bros Garg Mhatre & Rushank Patil teased me a lot calling Abhijeet Tendulkar as palak paneer.. they weren't very happy as "that man" was taking their sister away...
Usually make palak paneer with garama garam parathas..
Today tweaked it a little...and it's new addition to my cookbook

Paneer raviolis in spinach sauce
( Fancy name 😅😅)

Mixed plain flour (1&1/2cup) with 2 eggs and salt and make a stiff dough and keep it in sealed bag for an hour.NO WATER ADDED.. to make it veg.. u can add water but make stiff dough

In pan add oil+ onion+ mixed bell peppers+ dried basil+ herbs+ black pepper powder+ salt.. cook.
Off the stove
Grate some paneer and cheese..
That's the filling.
Blanch spinach leaves and puree.
In fry pan add butter + garlic (lots)+ onion pureed.. cook.. add spinach puree.. cook.. add lil cream and lil garam masala..
Roll the dough as thin as u can and cut rounds. Note to myself..get a pasta roller machine post lockdown..
Fill with paneer cheese mix and seal with water and crimp edges with fork.
Make sure there is no air trapped inside the ravioli
Boil water with lots of salt.. add raviolis & cook till they float about 3-5 mins..

Serve raviolis with spinach sauce, little cream and toasted pinenuts and drizzle some olive oil..
