Bok Choy stirfry with exotic vegetables

       Bok choy, a popular ingredient in chinese cooking, is the perfect vegetable for a quick, healthy side dish  for an Asian style entree Here tofu, mushrooms and bell peppers add flavor and make it more substantial.                This basic stir-fry can be served as is, quick and easy, this is one of my favorite ways to load up on leafy greens. Serve with fluffy white rice, or over noodles in soup.         Boy Choy is not easily available in India. But I was able to order fresh bok choy from Green Tokri, a farm located in Pune who delivers garden fresh vegetables and herbs right at your doorstep.  Lazy sunday morning... When you can roll in bed till late... No hungry mouths to feed.... No tension about what to cook for lunch box... No guests dropping in, so no elaborate cooking required....                              I am already day dreaming of such a lazy morning when I just wanna lay down and enjoy food cooked by me (nah) or cooked by someone special (sounds just right). But though I am lazy, food should be great but quick to make. Spinach n Paneer Tartlets

    Ahan, finally I made tarts. I have been planning to make them since so long but was always afraid of the tart pastry not being flaky and being undercooked or multiple of things that can go wrong. I was very very apprehensive of trying them. But I did it, made my first ever tarts filled with spinach and paneer. They turned out pretty good for the first attempt. The crust was nice flaky and crumbly. But I have tough time rolling out pastry in afternoon heat. So next time, evening is going to be my tart time. I remember me and Abhi sharing fruit filled tartlets in farmer's market in Sunnyvale. They were so crisp and just melted in mouths with fresh fruits topped on them. I so wanna make them, but with due respect to my ever increasing waistline, have decided to cut down fats n sugars from our diet..... So healthy food coming up..... I hope I will be able to stick to my new year's resolution atleast this year,,Getting back in shape.....          ...

Bharwa Paneer Pakodi

Bangalore is cool and it drizzles almost every evening,,, it feels like monsoon has already arrived. And if there is something which everyone associates with monsoon in India, its garma garam pakodas.. So one such cool evening, I decided to surprise my hubby with pakodas,,, paneer pakodas,, sounds interesting, wait for the next part, stuffed paneer pakodas (stuffed cottage cheese fritters) They are adapted from cook called as pure and simple by Viddu Mittal. Fresh Mango Pickle

Here's a one more simple jhatphat recipe which can add flavor to any meal.. Fresh mango pickle. It can be prepared instantly and tastes amazing with parathas and can also add zing to your daily meal..  I had to make this pickle and enjoy last few days of enjoying raw mangoes.. Thinking about this fresh raw mangoes marinated with mix of spices, sitting in my fridge waiting to be devoured, makes my mouth water.....                   I have vivid memories of me and my cousins running around our home in our native places hunting for the mangoes. When we used to hear  loud "thump",we used to run across the courtyard trying to find the ripe mango and eat it. Our home in Konkan is the most peaceful place I have ever been to.. Today is Saturday. My mind associates weekends with getting up late in morning, making & eating good food and visiting new places and pataoing my hubby to let me shop… I wanted to make something special. Opened my fridge and saw had nice ripe tomatoes, capsicum and fresh paneer. I wanted to bake something in the oven and decided to make bread with the stuff  in my pantry.
