Braised Chinese Cabbage

                          Chinese white cabbage is a Chinese leaf vegetable often used in Chinese cuisine, it is particularly popular in northern China around Beijing (Peking). This recipe is quick, simple yet delicious n healthy way to enjoy chinese cabbage. Serve it with hot steamed rice or noodles. Ingredients: 500g Chinese white cabbage 1 thinly sliced green pepper 200 gm mushrooms, sliced 1 tbsp dark soy sauce 1 tsp brown sugar 1 tbsp hoisin sauce 2 tablespoons groundnut oil salt ground black pepper Method:  Wash the napa cabbage and separate the leaves and wash all the leaves. Chop 1 inch pieces.  Heat 2 tbsp of oil in a wok/ large frying pan and heat up the oil till its sizzling hot on high flame. Stuffed Chicken Breast with Mushrooms

                               Chicken stuffed with mushrooms flavored with Indian spices without a drop of oil. What more can you ask for!!!              This delectable dish can be served with a side of rice to make a complete meal. Chicken breast is stuffed spiced mushrooms and covered in a saran wrap and foil and boiled in pot of hot water till the chicken is thoroughly cooked. In this method, chicken absorbs all the juices of mushrooms while cooking and remains tender and moist without addition of any fat.  Next time, I would prefer to make the chicken breast thinner. Spinach n Paneer Tartlets

    Ahan, finally I made tarts. I have been planning to make them since so long but was always afraid of the tart pastry not being flaky and being undercooked or multiple of things that can go wrong. I was very very apprehensive of trying them. But I did it, made my first ever tarts filled with spinach and paneer. They turned out pretty good for the first attempt. The crust was nice flaky and crumbly. But I have tough time rolling out pastry in afternoon heat. So next time, evening is going to be my tart time. I remember me and Abhi sharing fruit filled tartlets in farmer's market in Sunnyvale. They were so crisp and just melted in mouths with fresh fruits topped on them. I so wanna make them, but with due respect to my ever increasing waistline, have decided to cut down fats n sugars from our diet..... So healthy food coming up..... I hope I will be able to stick to my new year's resolution atleast this year,,Getting back in shape.....          ...

              Me and my Hubby are both great fans of mushroom.. white button mushrooms are pretty commonly found nowadays in India. But when we saw fresh oyster mushrooms in the newly opened Food Hall on 1 M.G.Road mall we were super thrilled. It was first time I could catch hold of fresh oyster mushrooms in India..            Anyways, God must have taken pity on me and we were able to get those oyster mushrooms. Mango is a seasonal fruit and there are so many amazing dishes to make with the raw mango as well as ripe one, one falls short of time. I love the raw green mango as much as love the sweet ripe mango. Raw green mango tastes great as it is and even better when sprinkled with some salt and chilli powder. Kairichi amti The recipe here is a curry made with raw mangoes simmered in coconut gravy. Its a Konkani dish and it vegetarian version of fish curry which is made in Konkani houses. My hubby loves this version, so its commonly prepared in summer.  This recipe is handed over to me by my mother, who in turn learnt it from her mother in law. My granny was an amazing cook when it came to fishes n seafood.. She was born n brought in Goa before getting married and later shifting to Mumbai. French Fries Tadka ( potato vegetable) Sounds weird!!! But that’s what I made. When I have no vegetables in home, my dearest potato never fails to help me to make quick and tasty meal. We are a family of potato lovers. So बटाटा भाजी in any avatar is always a big welcome. Trust me & try it Ingredients: 2 large potatoes 1 tbsp oil 1 tbsp mix spices( mustard, sesame, ajwain, kalonji, jeera, badisaunf) Pinch of asafetida ½ tsp turmeric 1 tsp garam masala 1 ½ tsp chilli pwd Salt ( to taste) Method: Heat oil in non stick frying pan Once oil is hot, add in asafetida and mix spices.              Yesterday, when we went grocery shopping, I was thrilled to see pack of Snow peas. I knew what I was going to do with that bright green fresh pack of goodies, I was going to cook Chow Mein. It’s first time I was able to get snow peas in India.Yes,they did add extra crunch to my regular noodles. What are snow peas? Bright green snow peas – often used in Asian stir-fries –are edible peas with the best features of snap beans (tender and crispy) and garden peas (sweet and meaty ). Snow peas are flat with tiny seeds that are barely visible through the pods. Methi Malai Paneer

Methi Malai paneer is gravy cooked with paneer floating in a rich creamy sauce, flavored with methi. It can be made really quick and never fails to impress your guests. I often make it as my hubby loves methi. So here is the recipe which is nutritious, simple and tasty Ingredients: 2 tbsp oil A pinch of hing (asafoetida) 1 tbsp jeera 1 large onion 6 cloves garlic ½ inch ginger 2 tbsp cashew 4 green chilies 3 cups chopped methi 1 cup cubed paneer ½ cup cream ½ cup water 1 tbsp sugar Salt (to taste) 2 tbsp kasoori methi Method: Heat oil and ghee in a non-stick or regular pan and add a pinch of asafoetida followed by jeera Add fresh methi leaves and saute until it shrinks. In meantime, grind onion, ginger, garlic, green chilies and cashews in fine paste in mixer Once the methi leaves shrink , add the above aste and sauté for another 3-4 mins till the raw smell of onion goes.
